2 large egg whites
1 cup diced tomatoes
1 tablespoon tomato paste
1/4 medium red bell pepper
1/4 medium onion
2 cloves garlic
1/4 cup chickpeas
1/2 teaspoon harissa paste
1/2 teaspoon ground cumin
1/4 teaspoon paprika
1/4 teaspoon ground coriander
1 teaspoon olive oil
1 tablespoon fresh parsley
1/4 teaspoon salt
1/8 teaspoon black pepper

Heat 1 teaspoon of olive oil in a medium non-stick skillet over medium heat.

Add 1/4 medium diced onion and cook for 2 minutes until softened.

Add 1/4 medium diced red bell pepper and 2 minced garlic cloves, cooking for another 2 minutes.

Stir in 1 tablespoon tomato paste, 1/2 teaspoon harissa paste, 1/2 teaspoon cumin, 1/4 teaspoon paprika, and 1/4 teaspoon coriander. Cook for 1 minute until fragrant.

Add 1 cup diced tomatoes and 1/4 cup drained chickpeas. Simmer for 5 minutes until slightly thickened.

Create 3 small wells in the tomato mixture and crack 3 whole eggs into them.

Pour 2 egg whites around the whole eggs.

Cover the pan and cook for 4-5 minutes until the egg whites are set but the yolks are still runny (or cook longer if you prefer firmer yolks).
