Chef's Note
For the most authentic Moroccan flavor, toast your spices in a dry pan for 30 seconds before adding them to the porridge. This activates their essential oils and creates a more aromatic dish. If you prefer a smoother texture, you can blend the cooked porridge briefly with an immersion blender before adding the toppings.

Ingredients
1/2 cup rolled oats
1 scoop (30g) protein powder (unflavored or vanilla)
3 tablespoons egg whites
3/4 cup unsweetened almond milk
1/4 cup Greek yogurt (0% fat)
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground cardamom
1/8 teaspoon ground turmeric
1 pinch salt
1 teaspoon honey
1 tablespoon sliced almonds
1 tablespoon dried apricots (unsweetened)
3 leaves fresh mint leaves
Instructions
- 1
In a medium saucepan, combine 1/2 cup rolled oats, 3/4 cup unsweetened almond milk, and a pinch of salt. Bring to a gentle simmer over medium heat.
- 2
Once simmering, reduce heat to medium-low and add 1/2 teaspoon cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground cardamom, and 1/8 teaspoon ground turmeric. Stir well to combine.
- 3
Cook the oats for about 5 minutes, stirring occasionally to prevent sticking, until they begin to thicken.
- 4
In a small bowl, whisk together 3 tablespoons egg whites and 1 scoop protein powder until smooth.
- 5
Slowly pour the egg white mixture into the oats while stirring continuously to prevent clumping. Continue cooking for another 2-3 minutes until the mixture thickens further.
- 6
Remove from heat and stir in 1/4 cup Greek yogurt and 1 teaspoon honey until well incorporated.
- 7
Finely chop 1 tablespoon dried apricots and mince 3 mint leaves, reserving a few small pieces for garnish.
- 8
Transfer the porridge to a serving bowl and top with 1 tablespoon sliced almonds, the chopped dried apricots, and minced mint.
- 9
Allow to cool slightly before serving, as the porridge will continue to thicken.
