  • 2 pounds bone-in, skin-on chicken thighs

  • 3 tablespoons olive oil

  • 1 whole lemon

  • 1 medium, diced yellow onion

  • 2 medium, diced carrots

  • 2 diced celery stalks

  • 5 cloves, minced garlic

  • 2 sprigs fresh rosemary

  • 4 sprigs fresh thyme

  • 1 whole bay leaf

  • 2 15-oz cans, drained and rinsed cannellini beans

  • 1 pint, halved cherry tomatoes

  • 1 cup chicken broth

  • 1/2 cup dry white wine

  • 1 teaspoon dried oregano

  • 3/4 cup panko breadcrumbs

  • 1/2 cup, crumbled feta cheese

  • 1/3 cup, chopped fresh parsley

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon (optional) red pepper flakes

  • 1/3 cup, pitted and halved kalamata olives

    Preheat oven to 375°F (190°C).

    Pat chicken thighs dry with paper towels. Season generously with salt and pepper on both sides.

    Heat 2 tablespoons of olive oil in a large oven-safe Dutch oven over medium-high heat. Working in batches if necessary, place chicken skin-side down and cook for 5-7 minutes until skin is golden and crispy. Flip and cook for another 3 minutes. Transfer to a plate.

    In the same pot, add the remaining 1 tablespoon of olive oil. Add diced onion, carrots, and celery. Sauté for 5 minutes until vegetables begin to soften.

    Pour in white wine, scraping the bottom of the pot to release any browned bits. Simmer for 2 minutes until slightly reduced.
