1 cup low-sodium chicken or vegetable broth

2 cups baby spinach
1 tablespoon white vinegar

1 medium avocado, sliced
1 cup cherry tomatoes, halved
3 green onions, thinly sliced

1/4 cup grated Parmesan cheese

In a medium saucepan, bring 3 cups of water and 1 cup of broth to a boil. Add 1 cup of steel-cut oats and 1/2 teaspoon salt. Reduce heat to low and simmer for 15-20 minutes, stirring occasionally, until oats are tender but still have some bite.

While oats are cooking, heat 2 tablespoons of olive oil in a skillet over medium heat. Add 8 ounces of sliced mushrooms and cook for 5-6 minutes until golden brown.

Add 2 minced garlic cloves to the mushrooms and cook for 30 seconds until fragrant. Add 2 cups of baby spinach and cook for 1-2 minutes until wilted. Season with salt and pepper to taste. Remove from heat and set aside.

Fill a large, deep skillet with water, leaving about 3 inches from the top. Bring to a gentle simmer and add 1 tablespoon of white vinegar.

Crack each egg into a small bowl. Create a gentle whirlpool in the water with a spoon, then carefully slide each egg into the water. Poach for 3-4 minutes for runny yolks. Remove with a slotted spoon and place on a paper towel to drain.
