  • 1 cup, quartered (from can, drained) artichoke hearts

  • 3 cups baby spinach

  • 3/4 cup, crumbled feta cheese

  • 1/4 cup, chopped fresh basil

  • 3 tablespoons, toasted pine nuts

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

    Bring a large pot of salted water to a boil. Cook 12 oz of pasta according to package directions until al dente, about 8-10 minutes.

    While pasta cooks, zest both lemons to yield about 1 tablespoon of zest, then juice them to get approximately 1/4 cup of juice.

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add 4 minced garlic cloves and 1/4 teaspoon red pepper flakes, cooking until fragrant but not browned, about 1 minute.
