Preheat oven to 375°F (190°C).

Dice 1 medium red bell pepper, 1 medium zucchini, and 1/2 medium yellow onion into small, even pieces.

Slice 1 cup of cherry tomatoes in half. Finely chop 2 tablespoons each of fresh chives, basil, and parsley.

In a large bowl, whisk together 10 large eggs, 1/4 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined.

Heat a 10-12 inch oven-safe skillet over medium heat. Add 2 tablespoons of olive oil.

Add the diced onion to the skillet and sauté for 2-3 minutes until translucent.
