Chef's Note
For the best texture, look for butter lettuce with large, cup-shaped leaves that can hold the filling well. If you prefer more heat, add a thinly sliced Thai chili to the beef mixture or serve with additional sriracha on the side. These wraps are perfect for meal prep - just store the filling and lettuce separately and assemble right before eating.

8 oz ground beef
1 head butter lettuce
2 cloves garlic
1 tbsp ginger
1/2 medium red bell pepper
1 medium carrot
3 stalks green onions
1/4 cup water chestnuts
2 tbsp hoisin sauce
1 tbsp low-sodium soy sauce
1 tsp rice vinegar
1 tsp sesame oil
1/2 tsp sriracha sauce
1 tbsp vegetable oil
1 tsp toasted sesame seeds

Wash the butter lettuce leaves carefully, separate them, and set aside to dry on paper towels.

Mince 2 cloves of garlic and 1 tablespoon of fresh ginger.

Finely dice 1/2 red bell pepper and 1 medium carrot.

Thinly slice 3 stalks of green onions, separating the white and green parts.

Drain and chop 1/4 cup of water chestnuts.

In a small bowl, whisk together 2 tablespoons of hoisin sauce, 1 tablespoon of soy sauce, 1 teaspoon of rice vinegar, 1 teaspoon of sesame oil, and 1/2 teaspoon of sriracha sauce.

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

Add the minced garlic, ginger, and white parts of green onions. Sauté for 30 seconds until fragrant.

Add 8 oz of ground beef to the skillet and cook for about 5 minutes, breaking it up with a wooden spoon until browned.

Add the diced bell pepper and carrot to the skillet. Cook for another 3 minutes until vegetables begin to soften.

Stir in the chopped water chestnuts and sauce mixture. Cook for 2 minutes until everything is well combined and heated through.

Remove from heat and stir in the green parts of the green onions, reserving some for garnish.

To serve, spoon the beef mixture onto individual lettuce leaves, sprinkle with remaining green onions and 1 teaspoon of toasted sesame seeds.
