These muffins freeze beautifully! Make a double batch and freeze individually wrapped muffins for quick breakfasts throughout the week. To reheat, microwave for 30 seconds or warm in a 350°F oven for 5-7 minutes. For extra flavor, try adding a pinch of smoked paprika to the batter.

4 large eggs
1/4 cup milk
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/2 cup cheddar cheese
1/4 cup gruyere cheese
2 stalks green onions
1 teaspoon fresh thyme
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon butter

Preheat your oven to 375°F (190°C) and grease a 6-cup muffin tin with 1 tablespoon of butter.

Cook 4 slices of bacon in a skillet over medium heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain. Once cooled, chop into small pieces.

Finely chop 2 green onions, separating the white and green parts.

In a medium bowl, whisk together 4 large eggs and 1/4 cup of milk until well combined.

In a separate bowl, mix 1/2 cup of all-purpose flour, 1/2 teaspoon of baking powder, 1/4 teaspoon of garlic powder, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper.

Gradually add the dry ingredients to the egg mixture, stirring until just combined. Do not overmix.

Grate 1/2 cup of cheddar cheese and 1/4 cup of gruyere cheese if not already shredded.

Fold the chopped bacon, white parts of the green onions, 1 teaspoon of fresh thyme, and 3/4 of the cheese mixture into the batter.

Divide the batter evenly among 6 muffin cups, filling each about 2/3 full.

Sprinkle the remaining cheese and the green parts of the onions on top of each muffin.

Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
