This breakfast bake is perfect for busy mornings as it can be prepared the night before and refrigerated. Just add 5-10 minutes to the baking time if cooking from cold. For an extra protein boost, add 2 tablespoons of chia seeds or hemp hearts to the mixture before baking.

1 cup milk
1/2 cup Greek yogurt
3 tablespoons maple syrup
1 large egg
1 teaspoon vanilla extract

1 1/2 cups mixed berries (fresh or frozen)
1/4 cup chopped walnuts

Preheat your oven to 350°F (175°C). Grease a 1-quart baking dish with 1 tablespoon of butter.

In a large bowl, combine 1 cup of rolled oats, 1/2 teaspoon of baking powder, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of salt.

In a separate bowl, whisk together 1 cup of milk, 1/2 cup of Greek yogurt, 3 tablespoons of maple syrup, 1 large egg, and 1 teaspoon of vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir until fully incorporated.

Gently fold in 1 cup of the mixed berries, reserving 1/2 cup for topping.

Transfer the mixture to the prepared baking dish. Sprinkle the remaining 1/2 cup of berries and 1/4 cup of chopped walnuts on top.
