1/2 medium yellow bell pepper
1/2 small red onion
2 cloves garlic
2 cups baby spinach
1/2 cup cherry tomatoes

1 tablespoon fresh basil

Preheat oven to 375°F (190°C).

Dice 1 medium red bell pepper and 1/2 medium yellow bell pepper into small pieces.

Finely dice 1/2 small red onion and mince 2 cloves of garlic.

Halve 1/2 cup of cherry tomatoes and roughly chop 1/4 cup of kalamata olives.

In a 10-inch oven-safe skillet, heat 2 tablespoons of olive oil over medium heat.

Add the diced onion and sauté for 3 minutes until softened.

Add the diced peppers and minced garlic, cooking for another 3 minutes until peppers begin to soften.
