Chef's Note
These energy bites are perfect for busy sports nights! For the best texture and flavor, toast the oats as directed - it only takes a few extra minutes but adds a wonderful nutty flavor. You can customize these bites with your favorite mix-ins like coconut flakes, different nuts, or white chocolate chips. Make a double batch and freeze half for future busy weeks.

Ingredients
1 cup rolled oats
1/3 cup pumpkin puree
1/2 cup almond butter
1/4 cup honey
2 tablespoons ground flaxseed
1 tablespoon chia seeds
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 cup dark chocolate chips
1/4 cup chopped pecans
1/4 cup dried cranberries
1/4 teaspoon salt
Instructions
- 1
Toast 1 cup of rolled oats in a dry skillet over medium heat for 5 minutes, stirring frequently until lightly golden and fragrant. Transfer to a plate to cool completely.
- 2
In a large mixing bowl, combine 1/3 cup of pumpkin puree, 1/2 cup of almond butter, 1/4 cup of honey, and 1 teaspoon of vanilla extract. Stir until well combined.
- 3
Add the cooled toasted oats, 2 tablespoons of ground flaxseed, 1 tablespoon of chia seeds, 1 teaspoon of pumpkin pie spice, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of salt to the wet mixture. Stir until thoroughly combined.
- 4
Fold in 1/4 cup of dark chocolate chips, 1/4 cup of chopped pecans, and 1/4 cup of dried cranberries until evenly distributed throughout the mixture.
- 5
Cover the bowl and refrigerate for 30 minutes to allow the mixture to firm up and the flavors to meld.
- 6
Using a tablespoon or small cookie scoop, portion the mixture and roll into 18 balls (about 1.5 inches in diameter).
- 7
Store the energy bites in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.
