Chef's Note
For the best flavor, use avocados that yield slightly to gentle pressure but aren't too soft. If preparing ahead, you can mix the avocado with a bit more lemon juice to prevent browning, but it's best assembled just before eating. The Greek yogurt adds protein while keeping the fat content lower than using all avocado.

Ingredients
6 slices whole grain bread
3 medium ripe avocados
6 tablespoons hemp seeds
1 cup Greek yogurt
1 medium lemon
1 tablespoon extra virgin olive oil
1 cup cherry tomatoes
1 cup microgreens
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon red pepper flakes
1/2 teaspoon garlic powder
Instructions
- 1
Toast 6 slices of whole grain bread until golden brown and crispy on the outside but still slightly soft in the middle.
- 2
While bread is toasting, halve the 3 avocados, remove the pits, and scoop the flesh into a medium bowl.
- 3
Add the juice from 1/2 lemon, 1/2 teaspoon sea salt, 1/4 teaspoon black pepper, and 1/2 teaspoon garlic powder to the avocados. Mash with a fork until you reach your desired consistency (slightly chunky is recommended).
- 4
In a separate small bowl, mix 1 cup Greek yogurt with the remaining 1/2 lemon juice and a pinch of salt until smooth.
- 5
Slice 1 cup of cherry tomatoes in half and set aside.
- 6
Spread the Greek yogurt mixture evenly over each slice of toast, creating a base layer.
- 7
Top each slice with an equal portion of the avocado mixture, spreading it evenly.
- 8
Sprinkle 2 tablespoons of hemp seeds over each serving (2 slices of toast).
- 9
Arrange the halved cherry tomatoes on top and garnish with 1 cup of microgreens divided among all servings.
- 10
Drizzle 1 tablespoon of extra virgin olive oil over all the toast slices and sprinkle with 1/4 teaspoon red pepper flakes.
- 11
Serve immediately while toast is still warm and toppings are fresh.
