1 large English cucumber
1 cup cherry tomatoes
1 medium red bell pepper
1/4 cup red onion
1/4 cup fresh dill
1/4 cup fresh mint
1/4 cup fresh parsley
1 whole lemon
1 tablespoon extra virgin olive oil
2 teaspoons honey
1 teaspoon za'atar spice blend
1/2 teaspoon sumac
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
15 crackers whole grain crackers
3 tablespoons pine nuts

Toast 3 tablespoons of pine nuts in a dry skillet over medium heat for 2-3 minutes until golden brown, stirring frequently to prevent burning. Set aside to cool.

Wash and dry the cucumber, then cut it in half lengthwise. Use a spoon to scoop out the seeds, then dice into 1/4-inch pieces.

Halve 1 cup of cherry tomatoes and finely dice 1 medium red bell pepper.

Finely mince 1/4 cup of red onion and place in a small bowl with cold water for 5 minutes to reduce sharpness, then drain well.

Finely chop 1/4 cup each of fresh dill, mint, and parsley.

Zest the lemon, then juice it to yield approximately 2 tablespoons of juice.

In a large bowl, gently fold 3 cups of cottage cheese with the prepared cucumber, tomatoes, bell pepper, and drained red onion.
