Chef's Note

For extra flavor, try toasting the dry quinoa in a skillet for 2-3 minutes before cooking it in broth. This brings out a nutty flavor that complements the southwest spices beautifully. If you prefer a milder dish, remove all the jalapeño seeds and membranes, or substitute with a milder green chile.

Ingredients
  • 2 large red bell peppers

  • 1/2 cup quinoa

  • 1 cup vegetable broth

  • 1 tablespoon olive oil

  • 1/2 medium yellow onion

  • 2 cloves garlic

  • 1 small jalapeño

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • 1/2 teaspoon smoked paprika

  • 1 can (15 oz) black beans

  • 1/2 cup corn kernels

  • 1/2 can (14.5 oz) fire-roasted diced tomatoes

  • 1 tablespoon fresh lime juice

  • 1/4 cup fresh cilantro

  • 1/2 cup monterey jack cheese

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 medium avocado

  • 1/4 cup Greek yogurt

Instructions
  • 1

Preheat the oven to 375°F (190°C).

  • 2

Rinse 1/2 cup quinoa under cold water. In a medium saucepan, combine quinoa with 1 cup vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the liquid is absorbed and quinoa is tender. Fluff with a fork and set aside.

  • 3

Cut the 2 large bell peppers in half lengthwise and remove seeds and membranes. Place the pepper halves in a baking dish, cut side up.

  • 4

Finely dice 1/2 medium yellow onion, mince 2 cloves of garlic, and remove seeds and finely chop 1 small jalapeño (wear gloves to avoid irritation).

  • 5

Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

  • 6

Add minced garlic and chopped jalapeño to the skillet and cook for 1 minute until fragrant.

  • 7

Stir in 1 teaspoon ground cumin, 1 teaspoon chili powder, and 1/2 teaspoon smoked paprika. Cook for 30 seconds to toast the spices.

  • 8

Drain and rinse 1 can of black beans. Add the beans, 1/2 cup corn kernels, and 1/2 can of fire-roasted diced tomatoes to the skillet. Stir to combine and cook for 3-4 minutes.

  • 9

Add the cooked quinoa to the skillet and mix well. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.

  • 10

Remove from heat and stir in 1 tablespoon fresh lime juice and 3 tablespoons chopped cilantro (reserve some for garnish).

  • 11

Spoon the quinoa mixture evenly into the bell pepper halves. Cover the baking dish with foil and bake for 25 minutes.

  • 12

Remove the foil, sprinkle 1/2 cup monterey jack cheese over the peppers, and bake uncovered for an additional 10 minutes until the cheese is melted and the peppers are tender.

  • 13

While the peppers finish baking, dice 1/2 avocado and prepare the garnishes.

  • 14

Serve the stuffed peppers hot, topped with diced avocado, a dollop of Greek yogurt, and the remaining chopped cilantro.
