Chef's Note

For the most authentic masala chai flavor, try to use whole spices rather than pre-ground versions. The spices can be bundled in a piece of cheesecloth for easier removal. If preparing ahead of time, store the oatmeal base separately from the toppings and reheat with a splash of milk before adding the protein powder and fresh toppings.

Ingredients
  • 4 cups rolled oats

  • 4 cups milk

  • 2 cups Greek yogurt

  • 6 scoops protein powder (vanilla)

  • 8 whole cardamom pods

  • 3 whole cinnamon sticks

  • 6 whole whole cloves

  • 2 whole star anise

  • 2 tablespoons fresh ginger

  • 1/2 teaspoon black peppercorns

  • 2 tablespoons black tea leaves

  • 1/3 cup honey

  • 1 1/2 cups almonds

  • 1/4 cup ground flaxseed

  • 1/4 cup chia seeds

  • 1 cup dried apricots

  • 3 medium banana

  • 1/2 teaspoon salt

Instructions
  • 1

Toast 1 1/2 cups of almonds in a dry skillet over medium heat for 5-7 minutes until fragrant and golden, stirring frequently to prevent burning. Set aside to cool, then roughly chop.

  • 2

In a medium saucepan, combine 4 cups of milk with 8 cardamom pods (lightly crushed), 3 cinnamon sticks, 6 whole cloves, 2 star anise, 2 tablespoons freshly grated ginger, and 1/2 teaspoon black peppercorns. Bring to a gentle simmer over medium heat.

  • 3

Once simmering, turn off the heat and add 2 tablespoons of black tea leaves. Cover and steep for 5 minutes.

  • 4

Strain the spiced milk mixture through a fine-mesh sieve into a large pot, discarding the solids.

  • 5

Return the spiced milk to medium heat and add 4 cups of rolled oats and 1/2 teaspoon of salt. Bring to a simmer and cook for 5-7 minutes, stirring occasionally until the oats are tender and have absorbed most of the liquid.

  • 6

Remove from heat and stir in 1/3 cup of honey, 1/4 cup ground flaxseed, and 1/4 cup chia seeds. Let stand for 2 minutes to thicken.

  • 7

Dice 1 cup of dried apricots and slice 3 medium bananas. Fold half of each into the oatmeal mixture.

  • 8

Divide the oatmeal among 6 serving bowls. Top each portion with 2 cups of Greek yogurt (divided equally), the remaining chopped almonds, dried apricots, and banana slices.

  • 9

Stir 6 scoops of vanilla protein powder into the oatmeal just before serving, distributing evenly among the portions.
