Chef's Note
For the best texture and flavor, toast the nuts and oats a day ahead and store in an airtight container. This allows you to quickly assemble the parfaits when needed. The protein powder can be substituted with flavored varieties, but adjust the honey accordingly to maintain the right level of sweetness. For a more authentic Middle Eastern twist, try adding a pinch of saffron to the honey.

5 cups plain Greek yogurt (2% fat)
5 scoops protein powder (unflavored)
5 tablespoons honey
1 cup pistachios (shelled)
1/2 cup almonds (sliced)
1 cup old-fashioned rolled oats
1 tablespoon coconut oil
1 teaspoon ground cinnamon
1/2 teaspoon cardamom powder
2 cups fresh berries (mixed)
2 teaspoons lemon zest
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/2 cup dried figs, chopped
1/2 cup dried apricots, chopped

In a medium bowl, mix 5 cups of Greek yogurt with 5 scoops of unflavored protein powder, 1 teaspoon of vanilla extract, and 1 tablespoon of lemon juice until smooth and well combined.

In a small bowl, combine 2 teaspoons of lemon zest with 5 tablespoons of honey. Set aside.

Heat a skillet over medium heat and add 1 tablespoon of coconut oil. Once melted, add 1 cup of rolled oats, 1 teaspoon of cinnamon, and 1/2 teaspoon of cardamom powder.

Toast the oat mixture for about 5-7 minutes, stirring frequently until golden brown and fragrant. Remove from heat and let cool completely.

In a dry skillet over medium-low heat, toast 1 cup of shelled pistachios and 1/2 cup of sliced almonds for about 5-6 minutes, stirring occasionally until lightly toasted and fragrant. Let cool, then roughly chop the pistachios.

In a small bowl, combine the chopped dried figs and apricots. Set aside.

To assemble each parfait: In a glass or jar, layer 1/5 of the yogurt mixture, followed by 1/5 of the toasted oat mixture, 1/5 of the mixed berries, and 1/5 of the dried fruit mixture.

Add another 1/5 of the yogurt mixture on top, then sprinkle with 1/5 of the toasted nuts.

Drizzle 1 tablespoon of the honey-lemon zest mixture over each parfait.

Refrigerate for at least 15 minutes before serving to allow flavors to meld.
