Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Add 1 diced large yellow onion and 2 diced red bell peppers. Sauté for 5 minutes until softened.

Add 1 pound of ground turkey to the skillet and cook for about 5 minutes, breaking it up with a wooden spoon until browned.
