Chef's Note
For the best texture, use dried chickpeas soaked overnight rather than canned chickpeas. The dried chickpeas create a better texture and help the falafel hold together. If you're short on time, you can quick-soak the chickpeas by boiling them for 5 minutes, then letting them sit for 1 hour before draining and proceeding with the recipe.

2 cups dried chickpeas
1 medium red onion
4 cloves garlic cloves
1 cup fresh parsley
1/2 cup fresh cilantro
2 teaspoons ground cumin
1 teaspoon ground coriander

1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1/3 cup tahini
3 tablespoons lemon juice
3 tablespoons water
1 cup Greek yogurt
1/2 cup protein powder (unflavored)
1 teaspoon za'atar seasoning

Soak 2 cups of dried chickpeas in water overnight or for at least 8 hours. Drain well.

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a food processor, combine the soaked chickpeas, 1 medium chopped red onion, and 4 garlic cloves. Pulse until roughly chopped.

Add 1 cup fresh parsley, 1/2 cup fresh cilantro, 2 teaspoons ground cumin, 1 teaspoon ground coriander, 1/4 teaspoon cayenne pepper, 1 teaspoon baking powder, 1 teaspoon salt, and 1/2 teaspoon black pepper to the food processor. Pulse until the mixture is finely chopped but not pureed.

Transfer the mixture to a bowl and fold in 1/2 cup unflavored protein powder until well incorporated.

Using a tablespoon measure, scoop the mixture and form into small balls (about 40 total). Place on the prepared baking sheet.

Brush each falafel bite with 2 tablespoons olive oil.

Bake for 25-30 minutes, turning halfway through, until golden brown and crispy on the outside.

While the falafel bakes, prepare the tahini dip by whisking together 1/3 cup tahini, 3 tablespoons lemon juice, 3 tablespoons water, 1 cup Greek yogurt, and 1 teaspoon za'atar seasoning in a bowl until smooth.
