This baked oatmeal can be prepared the night before and refrigerated, then baked in the morning for a warm, hearty breakfast. For a dairy-free version, substitute almond milk and coconut oil for the milk and butter. The leftovers reheat beautifully in the microwave with a splash of milk for a quick breakfast throughout the week.

2 teaspoons baking powder

1/2 cup pure maple syrup

2 cups fresh mixed berries (strawberries, blueberries, raspberries)
1/2 cup chopped walnuts
1/4 cup brown sugar

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with cooking spray or butter.

In a large bowl, combine 3 cups of old-fashioned rolled oats, 2 teaspoons of baking powder, 2 teaspoons of ground cinnamon, and 1/2 teaspoon of salt. Mix well.

In a separate bowl, whisk together 2 cups of milk, 1/2 cup of pure maple syrup, 2 large eggs, 1/4 cup of melted unsalted butter, and 2 teaspoons of vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and stir until everything is thoroughly mixed.

Gently fold in 1 1/2 cups of the fresh mixed berries, reserving 1/2 cup for topping.

Transfer the oatmeal mixture to the prepared baking dish, spreading it evenly.

Sprinkle the remaining 1/2 cup of berries over the top of the oatmeal mixture.

In a small bowl, mix together 1/2 cup of chopped walnuts and 1/4 cup of brown sugar. Sprinkle this mixture evenly over the top of the oatmeal.
