Chef's Note
For the best flavor development, allow these energy balls to chill overnight. The spices will meld together beautifully, and the texture will firm up perfectly. 1/2 cup raw walnuts
8 whole medjool dates, pitted
1/4 cup dried apricots
1/4 cup dried cranberries
2 tablespoons chia seeds
2 tablespoons flaxseed meal
2 tablespoons almond butter
1 tablespoon honey
1 teaspoon cinnamon
1/4 teaspoon cardamom
1/8 teaspoon nutmeg
1/2 teaspoon vanilla extract
1/8 teaspoon sea salt
1/4 cup unsweetened shredded coconut

Preheat oven to 350°F (175°C). Spread the almonds and walnuts on a baking sheet and toast for 5 minutes until fragrant. Allow to cool completely.

Place the cooled nuts in a food processor and pulse until coarsely chopped.

Add the pitted dates, dried apricots, and dried cranberries to the food processor. Pulse until the mixture is well combined but still has some texture.

Transfer the mixture to a medium bowl and add 2 tablespoons of chia seeds, 2 tablespoons of flaxseed meal, 2 tablespoons of almond butter, and 1 tablespoon of honey.

Add 1 teaspoon of cinnamon, 1/4 teaspoon of cardamom, 1/8 teaspoon of nutmeg, 1/2 teaspoon of vanilla extract, and 1/8 teaspoon of sea salt to the bowl.

Mix thoroughly with a spatula, then use your hands to ensure all ingredients are well incorporated. The mixture should be sticky but hold together when pressed.

Place 1/4 cup of shredded coconut in a shallow dish.

Scoop about 1 tablespoon of the mixture and roll between your palms to form a ball. Repeat with the remaining mixture to make approximately 15 energy balls (5 per serving).
