Chef's Note
These energy bites are perfect for customization! Try adding dried cranberries, chopped nuts, or different spices like nutmeg or cardamom. For a firmer texture, toast the oats in a dry skillet for 5 minutes before mixing them in. If the mixture is too sticky to roll, add a tablespoon or two more of oats; if too dry, add a bit more peanut butter or honey.

Ingredients
2 medium ripe bananas
1.5 cups rolled oats
1/2 cup natural peanut butter
3 tablespoons honey
2 tablespoons ground flaxseed
1 tablespoon chia seeds
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 cup mini chocolate chips
1/4 cup unsweetened shredded coconut
1/4 teaspoon salt
Instructions
- 1
In a large bowl, mash the ripe bananas with a fork until smooth.
- 2
Add the peanut butter, honey, and vanilla extract to the mashed bananas and mix until well combined.
- 3
In a separate bowl, combine the rolled oats, ground flaxseed, chia seeds, cinnamon, and salt.
- 4
Add the dry ingredients to the banana mixture and stir until thoroughly incorporated.
- 5
Fold in the mini chocolate chips and shredded coconut.
- 6
Cover the bowl and refrigerate the mixture for at least 30 minutes to allow the oats to absorb moisture and make the mixture easier to handle.
- 7
Once chilled, use a tablespoon or cookie scoop to portion out the mixture and roll into balls about 1-inch in diameter.
- 8
Store the energy bites in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
- 9
For best flavor and texture, allow refrigerated energy bites to come to room temperature for about 5 minutes before serving.
