  • 1 medium red bell pepper

  • 1 teaspoon dried oregano

  • 2 tablespoons fresh dill

  • 1/2 cup Greek yogurt

  • 1 tablespoon lemon juice

    Finely dice 1/2 medium red onion and 1 medium red bell pepper. Mince 2 cloves of garlic.

    In a large bowl, whisk together 6 large eggs, 2 tablespoons milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined.

    Heat 1 tablespoon olive oil in a non-stick skillet over medium heat. Add the diced onion and sauté for 3 minutes until softened.
