1 large egg white

1/4 cup crystallized ginger, finely diced

Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.

In a small bowl, whisk together 1 egg white and 1 tablespoon of water until frothy but not stiff.

In a separate small bowl, combine 3 tablespoons of maple syrup, 2 tablespoons of brown sugar, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground cardamom, 1/2 teaspoon of ground ginger, 1/4 teaspoon of ground nutmeg, 1/8 teaspoon of cayenne pepper, and 1/2 teaspoon of fine sea salt.

Place all the nuts (1 cup almonds, 3/4 cup cashews, 3/4 cup pecans, and 1/2 cup walnuts) in a large mixing bowl and pour the egg white mixture over them. Toss thoroughly to coat all nuts evenly.

Add the spice mixture to the nuts and stir until all nuts are evenly coated with the spices.

Spread the coated nuts in a single layer on the prepared baking sheet.

Bake for 25-30 minutes, stirring every 10 minutes to ensure even toasting. The nuts are done when they're fragrant and lightly browned.

Remove from the oven and let cool completely on the baking sheet, about 30 minutes. The nuts will crisp up as they cool.

Once the nuts are completely cool, transfer them to a large bowl and add 1/2 cup dried cherries, 1/2 cup chopped dried apricots, 1/3 cup golden raisins, and 1/4 cup finely diced crystallized ginger.
