Chef's Note
This overnight oatmeal combines the protein power of cottage cheese with hearty oats for a nutritious breakfast that's ready when you wake up. The berry compote can be made up to 5 days in advance and stored in the refrigerator, making morning assembly a breeze. For a smoother texture, you can blend the cottage cheese before adding it to the oats. This breakfast is delicious cold, but can also be warmed in the microwave for 60-90 seconds if you prefer a hot breakfast.

Ingredients
1/2 cup rolled oats
1/2 cup cottage cheese
1 tablespoon chia seeds
1/3 cup almond milk
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/8 teaspoon salt
1 cup frozen mixed berries
2 tablespoons orange juice
1 tablespoon honey
1/2 teaspoon orange zest
2 tablespoons sliced almonds
2 mint leaves
Instructions
- 1
In the evening, prepare the overnight oats by combining rolled oats, cottage cheese, chia seeds, almond milk, maple syrup, vanilla extract, cinnamon, and salt in a jar or container with a lid.
- 2
Stir the mixture well until all ingredients are fully incorporated. Seal the container and refrigerate overnight (at least 6 hours).
- 3
To make the berry compote (can be made ahead and refrigerated), combine frozen mixed berries, orange juice, honey, and orange zest in a small saucepan.
- 4
Bring the berry mixture to a simmer over medium heat, then reduce heat to low and cook for about 8-10 minutes, stirring occasionally, until berries break down and the mixture thickens slightly.
- 5
Remove the compote from heat and let it cool completely. Transfer to an airtight container and refrigerate if making ahead.
- 6
In the morning, toast the sliced almonds in a dry skillet over medium heat for 2-3 minutes until golden and fragrant, stirring frequently to prevent burning.
- 7
To serve, give the overnight oats a good stir. If the mixture is too thick, add a splash of almond milk to reach your desired consistency.
- 8
Transfer the oats to a serving bowl, top with the berry compote, and sprinkle with toasted almonds.
- 9
Garnish with fresh mint leaves and serve cold or warm it up in the microwave for 1 minute if preferred.
