2 tablespoons chia seeds
1 cup whole milk ricotta cheese
1 cup Greek yogurt
3 tablespoons honey
1 tablespoon lemon zest
2 tablespoons lemon juice
1 teaspoon vanilla extract
1 cup almond milk
2 cups mixed berries (strawberries, blueberries, raspberries)
2 tablespoons maple syrup
1/4 cup sliced almonds
8 fresh mint leaves

In a medium bowl, combine rolled oats and chia seeds. Set aside.

In another bowl, whisk together ricotta cheese, Greek yogurt, 2 tablespoons honey, half the lemon zest, 1 tablespoon lemon juice, and vanilla extract until smooth.

Add the almond milk to the oat mixture and stir to combine. Let sit for 5 minutes to allow the chia seeds to begin absorbing liquid.

For the berry compote, add 1 1/2 cups of mixed berries to a small saucepan with remaining 1 tablespoon honey, 1 tablespoon lemon juice, and remaining lemon zest.

Cook the berry mixture over medium heat for 8-10 minutes, stirring occasionally, until berries break down and mixture thickens slightly. Remove from heat and let cool completely.

Toast the sliced almonds in a dry skillet over medium heat for 2-3 minutes until golden and fragrant, stirring frequently to prevent burning. Set aside to cool.

To assemble the breakfast jars: Divide the oat mixture among four 16-oz mason jars or containers, filling each about 1/3 full.

Layer the ricotta mixture on top of the oats in each jar.

Once cooled, spoon the berry compote on top of the ricotta layer.

Cover the jars with lids and refrigerate overnight or for at least 6 hours.

Before serving, top each jar with the remaining fresh berries, toasted almonds, and mint leaves. Drizzle with maple syrup if desired.
