This no-cook breakfast is perfect for busy mornings. Prepare it the night before and wake up to a delicious, ready-to-eat meal. The berry compote can be made up to 3 days in advance and stored in the refrigerator. For a smoother texture, you can blend some of the berries before mixing with the whole berries. Feel free to customize with your favorite fruits, nuts, or seeds.

1/3 cup Greek yogurt
1/3 cup almond milk
1 tablespoons chia seeds
1 tablespoon honey
1/2 teaspoon vanilla extract
1/2 teaspoon lemon zest
1 cup fresh mixed berries (strawberries, blueberries, raspberries)
2 tablespoons orange juice
1 tablespoon maple syrup
1/4 teaspoon cinnamon
2 tablespoons sliced almonds
2 mint leaves
1 pinch salt

In a mason jar or container with a lid, combine 1/2 cup rolled oats, 1/3 cup Greek yogurt, 1/3 cup almond milk, 1 tablespoon chia seeds, 1 tablespoon honey, 1/2 teaspoon vanilla extract, 1/2 teaspoon lemon zest, and a pinch of salt.

Stir well until all ingredients are thoroughly combined. Make sure there are no dry pockets of oats.

Seal the container and refrigerate overnight or for at least 6 hours.

For the berry compote, wash 1/2 cup of the mixed berries and place in a bowl. Mash gently with a fork to release some juices but leave some texture.

Add the remaining 1/2 cup whole berries to the mashed berries.

Stir in 2 tablespoons orange juice, 1 tablespoon maple syrup, and 1/4 teaspoon cinnamon. Mix gently to combine.

Cover the berry mixture and refrigerate overnight alongside the oats mixture.

When ready to serve, give the oats a good stir. If they're too thick, add a splash more almond milk to reach your desired consistency.
