1/4 cup almond milk (unsweetened)

1 tablespoon cacao nibs
1 tablespoon chopped macadamia nuts

In a medium bowl, whisk together 3 tablespoons of chia seeds, 1/2 cup of coconut milk, 1/4 cup of almond milk, 1 tablespoon of maple syrup, and 1/2 teaspoon of vanilla extract.

Stir well to ensure there are no clumps of chia seeds. Let sit for 2 minutes, then stir again to prevent clumping.

Cover the bowl and refrigerate for at least 2 hours or overnight until the mixture thickens to a pudding-like consistency.
