This simple chia pudding can be prepared in batches for the entire week. For a vegan version, substitute honey with additional maple syrup. Feel free to customize with your favorite fruits, nuts, or spices. The pudding will thicken the longer it sits, so you may want to add a splash more almond milk before serving if it's too thick.

3 tablespoons chia seeds
3/4 cup almond milk
1/4 teaspoon vanilla extract
1 tablespoon maple syrup
1/2 cup mixed berries (strawberries, blueberries, raspberries)
1 tablespoon sliced almonds
1 teaspoon honey
1/8 teaspoon ground cinnamon
2 tablespoons granola

In a mason jar or small container with a lid, combine the chia seeds, almond milk, vanilla extract, and maple syrup.

Stir well to ensure there are no clumps of chia seeds.

Seal the container and refrigerate overnight or for at least 4 hours.

When ready to serve, stir the chia pudding again to break up any clumps that may have formed.

Wash and prepare the mixed berries. If using strawberries, slice them into bite-sized pieces.

Layer half of the berries at the bottom of a serving bowl or glass.

Spoon the chia pudding over the berries.

Top with the remaining berries, sliced almonds, and granola.
