  • 1/4 tsp ground turmeric

  • 1/2 tsp paprika

  • 1/8 tsp cayenne pepper

  • 2 tbsp fresh cilantro

  • 1 tbsp vegetable oil

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 2/3 cup water

    Start by rinsing 1/3 cup basmati rice under cold water until the water runs clear. Drain well.

    In a small pot, combine the rinsed rice with 2/3 cup water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes.

    While the rice cooks, cut 6 oz of boneless skinless chicken thighs into 1-inch pieces. Season with 1/4 tsp salt and 1/8 tsp black pepper.
