Chef's Note
The key to perfectly crispy chickpeas is ensuring they're completely dry before roasting. For extra crunch, leave them in the turned-off oven with the door cracked for an additional 10 minutes after baking. These are best eaten within 24 hours for maximum crispness, but can be re-crisped in a 350°F oven for 5 minutes if they soften. Try experimenting with different spice combinations like curry powder, za'atar, or chili lime.

Ingredients
1 can (15 oz) canned chickpeas
1 tablespoon olive oil
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1 tablespoon honey
1/4 teaspoon sea salt
1 sprig fresh rosemary
1/2 teaspoon lemon zest
Instructions
- 1
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2
Drain and rinse the chickpeas thoroughly in a colander under cold water.
- 3
Spread the chickpeas on a clean kitchen towel and gently pat dry, removing as much moisture as possible. Remove any loose skins that come off during this process.
- 4
Transfer the dried chickpeas to a medium bowl.
- 5
In a small bowl, whisk together the olive oil, smoked paprika, cumin, garlic powder, cayenne pepper, and sea salt.
- 6
Pour the spice mixture over the chickpeas and toss until they're evenly coated.
- 7
Spread the seasoned chickpeas in a single layer on the prepared baking sheet.
- 8
Bake for 20 minutes, then remove from the oven and give the pan a shake to turn the chickpeas.
- 9
Return to the oven and bake for an additional 10 minutes, or until the chickpeas are golden and crispy.
- 10
While still hot, drizzle with honey and sprinkle with finely chopped fresh rosemary and lemon zest.
- 11
Toss gently to coat and allow to cool for 5-10 minutes on the baking sheet (they will crisp up more as they cool).
- 12
Serve immediately or store in an airtight container at room temperature for up to 3 days.
