4 ounces mixed mushrooms (cremini, shiitake, oyster)
1 small shallot
1 small garlic clove

1/4 cup Gruyere cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon fresh chives
1/4 cup cherry tomatoes

Preheat oven to 375°F (190°C).

In a bowl, whisk together 3 large eggs, 2 tablespoons milk, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until well combined. Set aside.

Clean and slice 4 ounces of mixed mushrooms. Finely dice 1 small shallot, mince 1 small garlic clove, and halve the cherry tomatoes.

Heat a 6-8 inch oven-safe skillet over medium heat. Add 1 tablespoon butter and 2 teaspoons olive oil.

Add the diced shallot and cook until translucent, about 2 minutes.

Add the sliced mushrooms and 1 teaspoon fresh thyme leaves to the pan. Cook until mushrooms are golden brown and have released their moisture, about 5-7 minutes.
