Core and dice the apple into small 1/4-inch cubes. Set aside 2 tablespoons for topping.

Add the wet ingredients to the dry ingredients and stir until well combined. Fold in the diced apple (except the reserved 2 tablespoons) and 1 tablespoon of chopped walnuts.
