Preheat your oven to 375°F (190°C) and lightly grease a small oven-safe baking dish or two 6-inch ramekins with 1 teaspoon of butter.

Cook 3 strips of bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove, drain on paper towels, and roughly chop when cool enough to handle.

Pour off most of the bacon fat from the skillet, leaving about 1 teaspoon. Return to medium heat and toast the bread slices until golden brown on both sides, about 2 minutes per side.

Cut the toasted bread into 1-inch cubes and place in the bottom of your prepared baking dish.

In a medium bowl, whisk together 3 large eggs, 2 tablespoons of milk, 1 tablespoon of maple syrup, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until well combined.

Sprinkle half of the chopped bacon and half of the shredded cheddar cheese over the bread cubes in the baking dish.

Pour the egg mixture evenly over the bread, bacon, and cheese. Top with the remaining bacon, cheese, and 2 tablespoons of chopped green onions.

Dot the top with the remaining 1 teaspoon of butter, cut into small pieces.
