4 oz high-quality dark chocolate (70% cacao)
1/4 cup dried apricots
1/4 cup dried figs, halved
1/4 cup dried tart cherries
1/4 cup dried mango, cut into strips
1 tsp coconut oil
1/4 tsp sea salt flakes
1/2 tsp orange zest
2 tbsp chopped pistachios
2 tbsp toasted coconut flakes

Line a baking sheet with parchment paper and arrange the dried fruits (1/4 cup each of apricots, figs, cherries, and mango) in a single layer. Place in the freezer for 10 minutes to chill.

While the fruit is chilling, create a double boiler by placing a heat-proof bowl over a pot of simmering water (make sure the bowl doesn't touch the water).

Add 4 oz of dark chocolate and 1 tsp of coconut oil to the bowl. Stir occasionally until completely melted and smooth, about 5-7 minutes.

Remove the chocolate from heat and stir in 1/2 tsp of orange zest. Let the chocolate cool slightly for 2-3 minutes, but ensure it remains fluid.

Remove the dried fruit from the freezer. Using a fork or dipping tool, dip each piece of fruit halfway into the melted chocolate, allowing excess to drip off.

Place the dipped fruit back on the parchment paper. While the chocolate is still wet, sprinkle some pieces with sea salt flakes, some with chopped pistachios, and others with toasted coconut flakes for variety.

Allow the chocolate to set at room temperature for about 20 minutes, or place in the refrigerator for 10 minutes to speed up the process.
