
Balsamic Glazed Salmon with Garlic Green Beans

Chef's Note
For the perfect salmon, look for the white protein to just begin seeping out of the sides - this indicates it's nearly done. Remove it from the oven at this point as it will continue cooking for a minute or two after. This prevents overcooking and keeps the salmon moist and tender.

6 oz salmon fillet
3 tbsp balsamic vinegar
1 tbsp honey
1 tsp dijon mustard
8 oz fresh green beans
2 cloves garlic cloves
1/2 whole lemon
2 tbsp olive oil
2 sprigs fresh thyme
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp red pepper flakes

Preheat the oven to 400°F (200°C).

In a small saucepan, combine 3 tbsp of balsamic vinegar, 1 tbsp of honey, and 1 tsp of dijon mustard. Bring to a simmer over medium heat and cook for about 5 minutes until slightly thickened. Set aside.

Pat the 6 oz salmon fillet dry with paper towels and season both sides with 1/4 tsp salt and 1/8 tsp black pepper.

Heat 1 tbsp of olive oil in an oven-safe skillet over medium-high heat. Place the salmon skin-side down and sear for 3 minutes.

Brush the salmon with half of the balsamic glaze and transfer the skillet to the preheated oven. Bake for 8-10 minutes until the salmon is cooked through but still moist.

While the salmon is cooking, trim the ends of 8 oz of green beans and rinse them.

Mince 2 garlic cloves and strip the leaves from 2 sprigs of thyme.

In another skillet, heat 1 tbsp of olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.

Add the green beans to the skillet with 1/4 tsp salt, 1/8 tsp black pepper, and 1/8 tsp red pepper flakes. Sauté for 5-7 minutes until tender-crisp.

Add the thyme leaves to the green beans and squeeze juice from half a lemon over them. Toss to combine and cook for another minute.

Remove the salmon from the oven and brush with the remaining balsamic glaze.

Plate the salmon alongside the garlic green beans and serve immediately.
