Rinse 1/2 cup quinoa under cold water until the water runs clear.

In a small saucepan, combine the rinsed quinoa with 1 cup water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed and quinoa is fluffy.

While the quinoa cooks, prepare the vegetables: julienne 1 medium carrot, thinly slice 1/2 medium cucumber, dice 1/4 medium red bell pepper, slice 1/4 medium avocado, and chop 2 stalks of green onions.

Cook 1/3 cup edamame according to package instructions (typically 3-4 minutes in boiling water), then drain and set aside.

Toast 1 tablespoon sesame seeds in a dry pan over medium heat for 2-3 minutes until golden and fragrant, stirring frequently to prevent burning.

Make the sesame dressing by whisking together 1 tablespoon rice vinegar, 1 tablespoon soy sauce, 2 teaspoons sesame oil, 1 teaspoon honey, 1/2 teaspoon freshly grated ginger, and 1 minced garlic clove in a small bowl.

Fluff the cooked quinoa with a fork and transfer to a serving bowl.
