For the best flavor development, toast the nuts yourself rather than using pre-roasted ones. If the mixture seems too dry to form into balls, add an extra teaspoon of coconut oil or honey. For a lower glycemic option, substitute half the dates with more nuts and a touch more honey.

1/4 cup raw walnuts
1/4 cup raw cashews
6 whole medjool dates
1/4 cup dried apricots
2 tablespoons dried cranberries
2 tablespoons dried goji berries
1 tablespoon chia seeds
1 tablespoon flaxseed meal
1 tablespoon raw honey
1 tablespoon coconut oil
1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground ginger
1/8 teaspoon sea salt
2 tablespoons unsweetened shredded coconut

Preheat oven to 325°F (165°C). Spread the almonds, walnuts, and cashews on a baking sheet and toast for 8-10 minutes until lightly golden and fragrant, stirring halfway through.

Allow the toasted nuts to cool for 5 minutes, then transfer to a food processor.

While the nuts are cooling, pit the medjool dates and roughly chop the dried apricots.

Pulse the nuts in the food processor until coarsely chopped, about 10-15 pulses.

Add the dates, dried apricots, dried cranberries, and goji berries to the food processor. Pulse until the mixture starts to come together, about 15-20 pulses.

Add the chia seeds, flaxseed meal, honey, coconut oil, vanilla extract, cinnamon, cardamom, ginger, and sea salt. Process until the mixture forms a sticky dough that holds together when pressed, about 30-45 seconds.

Place the shredded coconut in a small bowl.

Using a tablespoon measure, scoop out portions of the mixture and roll between your palms to form balls about 1-inch in diameter.

Roll each ball in the shredded coconut to coat the outside.

Place the energy bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
