4 oz roasted red peppers
1 small shallot
2 cloves garlic
1/4 cup chicken broth
1/4 cup white wine
2 tbsp heavy cream
2 tbsp fresh basil
2 wedges lemon

Preheat oven to 375°F. Line a baking sheet with parchment paper.

If using a thick chicken breast, butterfly it or pound to an even thickness of about 1/2 inch.

In a shallow dish, combine panko breadcrumbs, 1 tbsp chopped fresh rosemary, 1 tbsp chopped fresh thyme, 1/2 tsp garlic powder, 1/4 tsp salt, and 1/4 tsp black pepper.

Brush the chicken breast with 1 tbsp Dijon mustard, coating all sides evenly.

Press the chicken into the herb-breadcrumb mixture, ensuring it's well coated on all sides.

Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat. Once hot, add the breaded chicken and sear for 2-3 minutes per side until golden brown.

While the chicken is baking, prepare the roasted red pepper sauce. Drain and roughly chop 4 oz of roasted red peppers.
