1 cup spinach
4 quartered artichoke hearts
2 tablespoons sun-dried tomatoes
2 tablespoons goat cheese
2 tablespoons red onion
2 tablespoons milk
1 teaspoon fresh thyme
1/2 teaspoon fresh rosemary
2 teaspoon olive oil
1 clove garlic
1/4 teaspoon salt
1/8 teaspoon black pepper

The night before: Lightly grease a single-serving ramekin or small oven-safe dish.

Finely chop the red onion and mince the garlic clove. Roughly chop the spinach and drain and chop the artichoke hearts.

In a small skillet, heat 1 teaspoon olive oil over medium heat. Add the chopped onion and sauté for 2 minutes until softened.

Add the minced garlic and cook for 30 seconds until fragrant.

Add the spinach and cook until just wilted, about 1 minute. Remove from heat and let cool slightly.

In a bowl, whisk together 3 eggs, 2 tablespoons milk, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.

Chop the sun-dried tomatoes and fresh herbs. Add them to the egg mixture along with the cooled spinach mixture and chopped artichoke hearts.

Pour the mixture into the prepared baking dish. Crumble the goat cheese on top and drizzle with the remaining teaspoon of olive oil.

Cover tightly with plastic wrap and refrigerate overnight.

In the morning: Preheat oven to 375°F (190°C). Remove the dish from the refrigerator while the oven heats.
