Chef's Note
For extra crispy apple chips, make sure to slice the apples as thinly as possible. The thinner they are, the crispier they'll become. You can experiment with different apple varieties - Honeycrisp, Gala, and Fuji work particularly well. For a dairy-free version, substitute the Greek yogurt with coconut yogurt.

1 cup plain Greek yogurt
1 tablespoon honey
1/2 teaspoon vanilla extract
1 tablespoon lemon juice

Preheat your oven to 225°F (110°C) and line two baking sheets with parchment paper.

Wash and core the apples, then slice them very thinly (about 1/8 inch thick) using a sharp knife or mandoline.

Place the apple slices in a large bowl and toss with lemon juice to prevent browning.

Sprinkle the apple slices with cinnamon and nutmeg, then toss gently to coat evenly.

Arrange the apple slices in a single layer on the prepared baking sheets, making sure they don't overlap.

Bake in the preheated oven for 1 hour, then flip the slices and continue baking for another 1-1.5 hours until the edges curl up and the apples are crisp.

While the apples are baking, prepare the dip by mixing the Greek yogurt, honey, and vanilla extract in a small bowl. Refrigerate until ready to serve.
