8 oz buckwheat soba noodles
10 oz chicken breast
8 oz shrimp
3 tbsp tamari or soy sauce
3 tbsp lime juice
1 tbsp sesame oil
2 tbsp honey
3 cloves garlic
1 inch ginger
1 small red chili
1 medium cucumber
1 medium red bell pepper
1 cup edamame
1/2 cup fresh basil leaves
1/2 cup fresh cilantro
1/3 cup roasted cashews
1 tbsp sesame seeds

Cook 8 oz of buckwheat soba noodles according to package instructions (usually 4-5 minutes in boiling water). Drain, rinse under cold water, and toss with a drizzle of sesame oil to prevent sticking.

Season 10 oz of chicken breast with salt and pepper. Heat 1 tbsp of oil in a skillet over medium-high heat and cook for 5-6 minutes per side until cooked through (internal temperature of 165°F). Set aside to rest.

In the same pan, cook 8 oz of peeled and deveined shrimp for 2 minutes per side until pink and opaque. Set aside.

Make the dressing by whisking together 3 tbsp tamari or soy sauce, 3 tbsp lime juice, 1 tbsp sesame oil, 2 tbsp honey, 3 minced garlic cloves, 1 inch of grated ginger, and 1 finely chopped small red chili.

Slice the cooled chicken into thin strips. Dice 1 medium cucumber and 1 medium red bell pepper into small pieces.

Cook 1 cup of frozen edamame according to package instructions, then drain and cool.

Roughly chop 1/2 cup fresh basil leaves and 1/2 cup fresh cilantro.

In a large bowl, combine the cooled soba noodles, sliced chicken, cooked shrimp, cucumber, bell pepper, and edamame.

Pour the dressing over the salad and toss gently to combine.

Just before serving, fold in the fresh herbs and sprinkle with 1/3 cup chopped roasted cashews and 1 tbsp sesame seeds.
