In a medium bowl, whisk together 6 tablespoons of chia seeds, 1 cup of coconut milk, and 1 cup of almond milk until well combined.

Add 2 tablespoons of maple syrup, 1 teaspoon of vanilla extract, and 1/4 teaspoon of cinnamon to the mixture. Whisk thoroughly to incorporate all ingredients.

Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and create a pudding-like consistency.

After refrigeration, stir the pudding to break up any clumps. If it's too thick, add a splash more almond milk; if too thin, add another teaspoon of chia seeds and let sit for 30 minutes more.
