Toast 1 cup of rolled oats in a dry skillet over medium heat for about 5 minutes, stirring frequently until lightly golden and fragrant. Transfer to a plate to cool completely.

Finely chop 1/3 cup of dried apple pieces into small bits.

In a food processor, pulse the cooled toasted oats for about 10 seconds to break them down slightly.

Add 1/3 cup of almond butter, 3 tablespoons of honey, the chopped dried apple, 1 teaspoon of ground cinnamon, 2 tablespoons of ground flaxseed, 1 tablespoon of chia seeds, 1/2 teaspoon of vanilla extract, and 1/8 teaspoon of salt to the food processor.

Pulse until the mixture comes together and ingredients are well incorporated, about 30-45 seconds.

Transfer the mixture to a bowl and fold in 1/4 cup of chopped walnuts.

If the mixture seems too dry, add 1-2 teaspoons of water. If too wet, add a few more oats.
