Chef's Note
For extra flavor, try adding a pinch of dried dill or a dash of hot sauce to the tuna mixture. If you prefer a lighter version, you can use Greek yogurt in place of some or all of the mayonnaise.

1 5-ounce can canned tuna
2 tablespoons mayonnaise
1 stalk celery
2 tablespoons red onion
1 teaspoon lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
2 slices bread slices
2 slices cheddar cheese
1 tablespoon butter
Instructions

Drain 1 5-ounce can of tuna and place in a medium bowl.

Finely dice 1 stalk of celery and 2 tablespoons of red onion.

Add 2 tablespoons of mayonnaise, 1 teaspoon of lemon juice, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper to the tuna. Mix well.

Add the diced celery and red onion to the tuna mixture and stir to combine.

Spread 1 tablespoon of butter evenly on one side of each bread slice.

Place one slice of bread, butter side down, in a non-stick skillet over medium heat.

Spoon the tuna mixture onto the bread in the skillet and top with 2 slices of cheddar cheese.

Place the second slice of bread on top, butter side up.

Cook for about 2-3 minutes until the bottom is golden brown, then carefully flip the sandwich.

Cook for another 2 minutes until the cheese is melted and the bread is golden brown.

Remove from heat, cut in half, and serve immediately.
