Chef's Note
For extra flavor, let the beef mixture cool slightly before assembling the quesadillas - this prevents the tortillas from getting soggy. You can also add any leftover vegetables from your fridge to boost the nutritional value!

4 oz ground beef
1 tsp taco seasoning
2 large flour tortillas
1/2 cup shredded cheddar cheese
1/4 cup diced onion
1 tsp vegetable oil
2 tbsp sour cream
2 tbsp salsa
Instructions

Heat a skillet over medium heat and add 1 tsp of vegetable oil.

Add 1/4 cup of diced onion to the skillet and cook for 2 minutes until softened.

Add 4 oz of ground beef to the skillet and break it apart with a spatula. Cook for 5-6 minutes until browned.

Sprinkle 1 tsp of taco seasoning over the beef and stir to combine. Cook for 1 minute more.

Remove the beef mixture from the skillet and set aside. Wipe the skillet clean.

Place one large flour tortilla in the skillet over medium-low heat.

Sprinkle 1/4 cup of shredded cheddar cheese on half of the tortilla.

Spread half of the beef mixture over the cheese.

Fold the empty half of the tortilla over the filling and press down gently.

Cook for 2-3 minutes until golden brown, then flip and cook for another 2 minutes.

Repeat with the second tortilla and remaining ingredients.

Cut each quesadilla into triangles and serve with 2 tbsp of sour cream and 2 tbsp of salsa on the side.
