Chef's Note
For a heartier version, you can add some cooked ground beef or chicken. To keep the tortilla from getting soggy, make sure to drain any excess liquid from your beans and salsa before assembling.

Ingredients
1 large (10-inch) flour tortilla
1/2 cup refried beans
1/3 cup shredded cheddar cheese
2 tablespoons salsa
1 tablespoon sour cream
1 tablespoon green onion
1 teaspoon vegetable oil
Instructions
- 1
Heat 1 teaspoon of vegetable oil in a small saucepan over medium heat. Add 1/2 cup of refried beans and stir until warmed through, about 2-3 minutes.
- 2
Warm the flour tortilla in the microwave for 10-15 seconds to make it more pliable.
- 3
Lay the tortilla flat on a plate and spread the warmed refried beans in a line down the center, leaving about 2 inches from the edges.
- 4
Sprinkle 1/3 cup of shredded cheddar cheese over the beans.
- 5
Add 2 tablespoons of salsa and 1 tablespoon of sour cream on top of the cheese.
- 6
Sprinkle 1 tablespoon of chopped green onion over everything.
- 7
Fold in the sides of the tortilla, then roll it up from the bottom to create a burrito.
- 8
Heat a skillet over medium heat and place the burrito seam-side down. Cook for about 2 minutes until golden brown, then flip and cook for another 2 minutes until the cheese is melted and the tortilla is crispy.
