Chef's Note
For extra flavor with minimal effort, add a tablespoon of canned diced green chilies to the beef mixture. If you're in a hurry, you can use pre-shredded cheese to save time on prep. These enchiladas reheat well if you want to make extra for lunch the next day.

Ingredients
4 oz ground beef
1 tablespoon taco seasoning
2 count small flour tortillas
1/2 cup enchilada sauce
1/3 cup shredded cheddar cheese
2 tablespoons diced onion
1 teaspoon vegetable oil
2 tablespoons water
1 tablespoon sour cream (for serving)
Instructions
- 1
Preheat oven to 375°F (190°C).
- 2
In a skillet, heat 1 teaspoon of vegetable oil over medium heat. Add 2 tablespoons of diced onion and cook for 2 minutes until softened.
- 3
Add 4 oz of ground beef to the skillet and cook for 5 minutes until browned, breaking it up with a spoon as it cooks.
- 4
Sprinkle 1 tablespoon of taco seasoning over the beef and add 2 tablespoons of water. Stir and simmer for 2 minutes until the liquid is mostly absorbed.
- 5
Pour 2 tablespoons of enchilada sauce into a small baking dish (sized for 2 enchiladas).
- 6
Warm 2 tortillas in the microwave for 10-15 seconds to make them more pliable.
- 7
Place half of the beef mixture down the center of each tortilla. Sprinkle 1 tablespoon of cheese on each.
- 8
Roll up the tortillas and place them seam-side down in the baking dish.
- 9
Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- 10
Bake for 10-12 minutes until the cheese is melted and bubbly.
- 11
Serve with 1 tablespoon of sour cream on top.
