Chef's Note
The key to perfect clusters is not stirring the granola while it cools. The egg white acts as a natural binder, creating those satisfying chunks. For a vegan version, substitute the egg white with 2 tablespoons of aquafaba (chickpea liquid) whisked until frothy.

Ingredients
1 cup rolled oats
1/4 cup raw almonds
1/4 cup raw pecans
2 tablespoons pumpkin seeds
1 tablespoon flaxseeds
2 tablespoons unsweetened coconut flakes
3 tablespoons pure maple syrup
2 tablespoons coconut oil
1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cardamom
1/4 teaspoon sea salt
2 tablespoons dried cranberries
1 small egg white
Instructions
- 1
Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
- 2
Roughly chop 1/4 cup almonds and 1/4 cup pecans into smaller pieces, but leave some larger chunks for texture.
- 3
In a large bowl, combine 1 cup rolled oats, chopped nuts, 2 tablespoons pumpkin seeds, 1 tablespoon flaxseeds, and 2 tablespoons coconut flakes.
- 4
In a small saucepan over low heat, warm 2 tablespoons coconut oil until melted. Add 3 tablespoons maple syrup and stir to combine.
- 5
Remove the saucepan from heat and stir in 1/2 teaspoon vanilla extract, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/8 teaspoon cardamom, and 1/4 teaspoon sea salt.
- 6
Pour the warm maple mixture over the dry ingredients and stir thoroughly to coat everything evenly.
- 7
In a small bowl, whisk 1 small egg white until frothy (this is the secret to creating clusters).
- 8
Gently fold the whisked egg white into the granola mixture until well incorporated.
- 9
Spread the mixture evenly on the prepared baking sheet, pressing it down slightly to encourage cluster formation.
- 10
Bake for 20 minutes, then remove from oven and gently stir, being careful not to break up the forming clusters too much.
- 11
Return to the oven and bake for an additional 10 minutes, or until the granola is golden brown and fragrant.
- 12
Remove from the oven and let cool completely on the baking sheet without stirring (this allows the clusters to set).
- 13
Once completely cooled, break the granola into clusters and mix in 2 tablespoons dried cranberries.
- 14
Store in an airtight container for up to two weeks.
