    Slice 1 medium eggplant into 1/2-inch rounds. Place on a paper towel-lined baking sheet and sprinkle with 1 tsp salt. Let sit for 15 minutes to draw out moisture.

    Meanwhile, prepare the breading station: Place 1/4 cup flour in one shallow dish. In a second dish, whisk together 1 large egg with 1 tbsp milk. In a third dish, combine 1/2 cup Italian breadcrumbs with 2 tbsp of the grated Parmesan cheese.
