
Tuscan White Bean and Kale Soup

Chef's Note
For a heartier version, you can add Italian sausage (brown it before adding the vegetables). Don't skip the Parmesan rind if possible - it adds incredible depth of flavor to the broth. If you can't find lacinato kale (also called dinosaur kale), regular curly kale works fine, but may need an extra minute or two to soften properly.

2 tablespoons olive oil
1 medium, diced yellow onion
2 medium, diced carrots
2 diced celery stalks
3 cloves, minced garlic
1 sprig, leaves removed and chopped fresh rosemary
1 teaspoon dried thyme
1/4 teaspoon red pepper flakes
2 15-oz cans, drained and rinsed cannellini beans
1 14.5-oz can diced tomatoes
4 cups vegetable broth
1 2-inch piece (optional) Parmesan rind
1 bunch, stems removed and leaves chopped lacinato kale
1 juiced lemon
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup grated Parmesan cheese

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy-bottomed pot over medium heat.

Add 1 diced onion, 2 diced carrots, and 2 diced celery stalks to the pot. Cook for 5-7 minutes until vegetables begin to soften.

Add 3 minced garlic cloves, 1 sprig of chopped rosemary leaves, 1 teaspoon dried thyme, and 1/4 teaspoon red pepper flakes. Cook for 1 minute until fragrant.

Add 2 cans of drained and rinsed cannellini beans, 1 can of diced tomatoes with their juices, and 4 cups of vegetable broth to the pot.

If using, add the 2-inch Parmesan rind. Bring the soup to a boil, then reduce heat to maintain a gentle simmer.

Using a wooden spoon, mash some of the beans against the side of the pot to thicken the soup slightly.

Simmer the soup for 15 minutes to allow flavors to meld.

Add the chopped kale leaves to the pot and cook for an additional 5 minutes until the kale is wilted but still bright green.

Remove the Parmesan rind if used. Stir in the juice of 1 lemon, 1 teaspoon salt, and 1/2 teaspoon black pepper. Taste and adjust seasonings as needed.

Serve hot, garnished with grated Parmesan cheese.
